  3. Incorporate the eggs by one to the butter and sugar mixture. Add the vanilla extract and lemon zest.

  4. In a separate bowl, add together the flour, salt, and baking powder.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Shape the dough into a log and plastic wrap it. Let it rest in the fridge for 15 min.

    Then, make 1-inch balls and place them on a baking sheet lined with parchment paper.

  7. Use your thumb to make an indentation in the center of each ball. Fill the indentations with jam or jelly.

  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.

    Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

     

Note

For a more intense lemon flavor, add 1/2 teaspoon of lemon extract to the dough.

If you don't have a lemon, you can use 1/2 teaspoon of orange zest instead.

Pepas can be stored in an airtight container at room temperature for up to 3 days.
