  • 4 Eggs
  • 200 grams Self-raising flour
  • 1 teaspoon Salt
  • 2 Lemons (zest of 2 lemons)

  • 150 grams powdered sugar
  • 1 Lemon (Juice)

    Instructions for the Lemon Pound Cake
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.

     

  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.

  3. In a separate bowl, whisk together the flour and salt. Add to the wet ingredients and mix until just combined. Stir in the lemon zest and juice.

  4. Pour the batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  5. Let the bread cool in the pan for 10 minutes before removing to a wire rack to cool completely.
